Middle Eastern Fattoush


Middle Eastern Fattoush (Level 1)

6 medium sized tomatoes
2 peeled and seeded cucumbers
1 bunch of fresh parsley, chopped
1 bunch of scallions or green onions
1/2 cup olive oil
2 tablespoons fresh mint
2 teaspoons dried oregano
1/2 cup crumbled feta cheese

Chop the tomatoes and cucumbers into 1/2 inch pieces. Thinly slice the green tops of scallions and add to the tomatoes. Add the olive oil, mint, oregano then salt & pepper to taste. Chill for one hour, then stir in the feta and serve.
