Creamy Cauliflower Puff Casserole

I love this for the Holidays!

Creamy Cauliflower Puff Casserole (Level 1)

1 8-ounce package softened cream cheese
4 cups hot mashed cauliflower
1 egg, beaten
1/3 cup finely chopped onion
1/4 cup chopped pimento
1 teaspoon salt
Dash of pepper
1 cup shredded cheddar cheese, for topping

Combine softened cream cheese and cauliflower, mixing until well-blended. Add remaining ingredients except shredded cheddar cheese.

Place in a 1-quart casserole dish; sprinkle cheddar cheese on top. Bake at 350° for 45 minutes.

Makes 6 to 8 servings.

(Make sure you drain your cauliflower thoroughly!!!!!!!!)
